Abstract

In this study, pumpkin was used in the production of food products. The pumpkin grew extensively in
the subtropical area of the world. The pumpkin in group vegetables are also important usually used as an
ingredients of cooking pumpkin vegetables. Furthermore, pumpkin was used as the chips in the food industry.
Frozen puri bread was produces by mixing pumpkin in puri bread and frozen. The method was analysed using
drying oven, marble furnace, Folin-Ciocalteau substance and Scavenging Activity on DPPH Radical for nutritional
value. Meanwhile, consumer acceptance was taking 30 respondents by hedonic scale using SPSS software. The
analysis of this study to examine content the nutritional value in Frozen Cucurbita Puri Bread which is mineral
content, moisture content and antioxidant content that can give benefit and as a healthy product. The product
acceptance to consumers, it is necessary to test consumers to decide the acceptance of product comparison between
Frozen Cucurbita Puri Bread and Plain Puri Bread.
